Bis in die 1930er-Jahre ging die K\u00e4seherstellung in der Region Pays-d\u2019Enhaut stetig zur\u00fcck. Diese Situation war haupts\u00e4chlich darauf zur\u00fcckzuf\u00fchren, dass sich Qualit\u00e4tsprobleme im Zusammenhang mit schwierigen Lagerbedingungen in den Kellern der Alph\u00fctten negativ auf den Absatz auswirkten. 1934 wurde mit dem Bau der L\u2019Etivaz-Keller begonnen. Die 30 Genossenschaftsmitglieder konnten darin ihre Produktion von 2'700 K\u00e4selaiben einlagern.<\/div><\/div><\/div><\/div>

1946<\/div>
1946 weitete die Genossenschaft ihren Wirkungsbereich auf die gesamte Region der Waadtl\u00e4nder Alpen aus. Der daraufhin errichtete Speicher erm\u00f6glichte die Lagerung von 3'000 Laiben zur Herstellung von Hobelk\u00e4se.<\/div><\/div><\/div><\/div>

1974<\/div>
Der konstante Produktionsanstieg f\u00fchrte zu einer Vergr\u00f6sserung der Keller im Jahr 1974.\n\nKurz darauf waren die Keller bereits zu klein, um die gesamte Produktionsmenge aufzunehmen. K\u00e4selaibe mussten im Tal gelagert werden. Die angek\u00fcndigte Schliessung der Keller des Milchverbands in Vevey zwang die Genossenschaft dazu, sich neu zu organisieren.\n\nSo beschloss dieselbe, die Lagerkapazit\u00e4t der L\u2019Etivaz-Keller erneut zu erh\u00f6hen, gleichzeitig die gesamte Anlage umzustrukturieren und die Reifungsbedingungen zu verbessern.<\/div><\/div><\/div><\/div>

1986<\/div>
Diese Vergr\u00f6sserung im Jahr 1986 f\u00fchrte den gesamten Reifungsprozess in die Wiege der Produktion zur\u00fcck. Die totale Lagerkapazit\u00e4t erh\u00f6hte sich auf 14'000 K\u00e4selaibe. \u00dcber die Jahre hinweg verschafften sich damit die Alpk\u00e4seproduzenten des L\u2019Etivaz AOP ein Arbeitsinstrument, das sowohl ihren spezifischen Bed\u00fcrfnissen als auch den immer anspruchsvolleren Bed\u00fcrfnissen des Marktes entsprach.<\/div><\/div><\/div><\/div>

2005<\/div>
2005 wurden die Keller erneut vergr\u00f6ssert und damit Platz zur Lagerung von weiteren 9'180 Laiben geschaffen. Damit ging man noch st\u00e4rker auf die Kundenbed\u00fcrfnisse nach kr\u00e4ftigeren K\u00e4sen mit l\u00e4ngerer Reifungszeit ein.\nNur wenige Jahre nach Errichtung des Kellers im Jahr 2005 k\u00fcndigte sich erneuter Platzmangel an.<\/div><\/div><\/div><\/div>
